Spongy Banana Muffin

家里的香蕉快变成"黑脸"了,就拿来做自己喜欢吃的蛋糕。(这食谱己做过很多次了)这次用silicon mould 做成muffin,可做6大粒。我喜欢吃时,涂上厚厚的奶油,真好吃!

食谱取自Nasi Lemak Lover,一点点的更改。

3 Eggs
130g sugar         (我只放100g,因为bananas会甜)
200g Banana (Ripe & cut into small pcs)
150g cake flour
1/2 tsp Baking powder
1/4 tsp Baking soda
100g Corn oil
1/8 tsp vanilla Rum, optional
50g walnuts, chopped   (自己加的)
2tbsp chocolate chips      (自己加的)

1. Preheat oven to 160 degree C.
2. Grease n sprinkle some flour  into silicon muffin mould.
3. Sieve flour, baking powder & soda together. Sieve twice & set aside.
4. Beat eggs, sugar , Rum & banana at max speed in a mixer till stiff/ribbon stage.
5. Fold in flour & mix well. (either use spatular or hand to mix)
6. Add in corn oil & mix well till batter is shiny & flowing. Fold in chopped walnuts n chocolate chips, mix well.
7. Bake for 40 - 45mins.
