Steam Moist Chocolate Cupcakes



可在一个钟头里完全的chocolate cupcakes,真好吃,又容易做,放三天还会软,值得一试哦! 可做14粒小cupcakes。如果要cake mould也可以,只是steam的时间必须拉长,至蒸熟为止。

食谱取自Jane's Corner,有少许更改。

Ingredients:

(A) 
180g butter
160g sugar 
200g full cream evaporated milk 
1/2tsp vanilla extract   (我没放)
2tbsp of rum (optional)

(B) 
2 eggs, slightly beaten with fork

(C) 
100g plain flour
50g cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda

Method:
  1. Combine (A) in a saucepan. Stir over low heat until sugar is dissolved and butter is melted, turn off the fire and keep warm.
  2. Add (B) into (1) and stir till well mix.
  3. Sift (C) into a large mixing bowl, then pour the eggs mixture (2) over the flour and stir till well mix (cake batter should be runny).
  4. Heat up the steamer.
  5. Pour the batter into the cupcakes moulds and place the moulds into the steamer.
  6. Steam over medium heat for 20mins.
