猪肉干



食谱取自Jessie-CookingMoments,做了少许更改。
材料:
2kgs 猪腿肉,搅碎
12tbsp sugar
8tbsp honey
4tbsp light soy sauce
4tbsp oyster sauce
3tbsp 绍兴酒
3tbsp 鱼露
1/2tsp 五香粉
1tbsp pepper
1tbsp salt

做法:

把全部材料混合,用筷子向一个方向搅拌至起胶,放在fridge 1 hour。用香蕉叶铺在baking tray上,用手把pork mince铺均匀,大约0。6cm。烤箱预热160C (fan forced),烤20 minutes至猪肉碎熟。取出,趁热切成片。烧热non-stick pan (不要加cooking oil),把切成片的猪肉干放入,用中小火煎至上色即可。

注意:
  1. 猪肉碎要有点肥油,这样肉干才会软。如果您比较喜欢硬的,那就全部用瘦肉。(煎时会有油流出,所以不会太肥,吃时也不会有太大的负担!)
  2. 在煎时要注意火候,因为肉干有加糖和honey,比较容易烧焦。
  3. 不要太惊讶我用2kgs pork mince,成品出来只剩1.2kgs而已。不够吃!
  4. 如做多肉干,包好放freezer,要吃时蒸热,或者用oven烤5 minutes即可!(记得要用最小的火烤)


铺上香蕉叶比较容易取出猪肉干。

切成你喜欢的大小片,容易煎。

  3. My chinese speaking is excellent... reading,, Hmmmm... a lot of difficulty. But from the recipe i can guess... contents i might be wrong but will this a try... she mentioned 2 kgs pork mince is hardly enough to eat! will let you know how i get on... thanks for the recipe
